What is Textured Soya?

It is known as "vegan minced meat". Textured soy protein is a vegetable protein obtained from soy flour or soy concentrate, from which the protein is extracted and then textured. It is therefore a protein substitute for those who do not consume or have reduced their consumption of animal protein (meat, fish, seafood or eggs).

Nutritionally, textured soya is high in protein (100g of textured soya provides 50g of protein) and low in fat. A serving of texturised soya could be 35-40g raw. It all depends on the needs of the individual. It is available in different shapes and sizes. The most common are fine texturised soya, coarse texturised soya and texturised soya fillets.

Recommended method of use

You can cook it as "minced meat", sautéed with vegetables, as a Bolognese sauce or as a filling for many dishes (stuffed aubergines or courgettes...).

  • Hydrate it: If you are going to use it in a stew, reserve some of the broth from that stew to hydrate it so that it acquires all the flavour. If you are going to sauté it, hydrate it with water for about 15 minutes before cooking.
  • Squeeze it: Once it has the desired texture, strain the soybeans. Do not crush it against the strainer! Let it retain a little of the water it has absorbed.
  • Srain the soybeans.
  • Season it without fear: Texturised soy has a mild flavour that won't overshadow the other ingredients you use it with, it's the perfect complement!

How much water is needed to hydrate it?

A little more than twice as much water as texturised soya, and a little more if you are going to boil it, taking into account the water that is absorbed and the water that evaporates.
